New Chef de Cuisine and A La Carte Menu at Pete's Place - Grand Hyatt Singapore
One of Singapore's oldest (and definitely my favourite!) Italian restaurant, Pete's Place (located within the Grand Hyatt Singapore) has just gotten a brand new Chef de Cuisine - Chef Cataldo Chiloiro who has over 25 years of culinary experience under his belt. A newly-refreshed a la carte menu has also unveiled as part of this change.
Chef Cataldo Chiloiro who began cooking when he was eight in the town of Taranta in Puglia, Italy will be featuring authentic Italian produce from his hometown like burrata cheese, truffles and extra virgin olive oil. Signature dishes from Chef Cataldo include the Parmigiana di Melanzane (fried eggplant slices with tomato sauce and covered in melted Italian cheese), pizza burrata and risotto funghi – risotto being one of his favourite Italian dishes.
The new menu features a Parmigiana di Melanzane (S$22++) and Chef Aldo’s special 48-hour pizza dough. Created in-house, the dough’s recipe allows the yeast to settle more evenly, which creates a lighter, more flavourful crust. This 48-hour dough is used for every handcrafted pizza at Pete’s Place, all of which are prepared in our brick oven that is fired with sustainably sourced Jarrah wood from Australia.
Embracing Hyatt’s global philosophy of “Food. Thoughtfully Sourced. Carefully Served”, Chiloiro works with his culinary team and local purveyors to source and serve sustainable produce all year round, bringing guests of Pete’s Place a truly “Italiano” experience in the heart of Orchard Road.
There is a new Hyatt Place opening in Bangkok - Hyatt Place Bangkok Sukhumvit 1 (not to be confused with the Hyatt Place Bangkok Sukhumvit near Phrom Phong) - and it has already started to accept stay reservations from 13 January 2025.
