Unlike most hotels where the emphasis tends to be on the tea in terms of beverage, the Four Seasons Hotel Singapore has put an equal amount (if not more) of thought into creating something special for the coffee-lovers as well. If you are a tea-drinker, you will be able to selection a beverage from the TWG Tea menu but this article will keep the coffee-drinkers in mind (there just isn't any other hotel in Singapore that places an emphasis on this). Diners enjoying the Weekend Afternoon Tea experience here will be able to select from a rather extensive list of fresh coffee which includes the usual Espresso, Cappuccino and Latte (as well as its iced equivalents) but what truly stands out is the Cold Brew Coffee and the Hot Brew Coffee which you typically do not see in a hotel.
I arrived on a pretty warm afternoon so zooming in straight and ordering the Cold Brew Coffee was a no-brainer for me. What a lot of people do not know about the One-Ninety Bar is the bar's terraza where you are able to enjoy the balmy evenings (I would not recommend you to sit outside in the afternoon) while sipping on this delicious cold brew coffee. The Four Seasons Hotel Singapore has basically imported a specialty Japanese brewing tower which you would be able to see in the One-Ninety Bar and the entire process starts by loading 3 litres of ice on top of this tower - the melted ice will then drip and enter the grounds (from 100% Arabic beans from Tanzania) chamber before traveling down the glass spiral which further aerates the flavour of the coffee beans.
I started the Weekend Afternoon Tea experience over at the One-Ninety Bar with an assortment of Open Faced Sandwiches. There were five distinct flavours while I was there - cherry tomatoes, egg, smoked salmon, strawberry and Japanese cucumber - and I went ahead to ask for one of each. I really enjoyed the yoghurt (instead of cream cheese) which is on the toasty bread and how it plays well with the natural flavours of the strawberry and Japanese cucumber in particular. Smoked salmon is also a crowd favourite as you typically can't go wrong with this combination. Feel free to ask for more if you are feeling hungry but I definitely would recommend leaving stomach space for the sweets (and more hot food!).
If you love your sweets, you would fall in love with the signature offerings that are prepared live by a Four Seasons veteran (as well as a graduate from the prestigious Le Cordon Bleu School in London), Pastry Chef Audrey Yee. Instead of the usual three-tier that one would expect in an Afternoon Tea situation, the Four Seasons Hotel Singapore has deviated away from that to present the delicious goodies on a sleek glass sheet. I went straight for the fresh blackcurrant scones that were served alongside clotted cream and a delicious homemade rose petal and strawberry preserve.
I also enjoyed the matcha (green tea) puff tremendously - the consistent custard-like cream in it had a slight bitterness amidst the sweetness which I thought was a delightful contrast in an otherwise flat dessert that most would expect. I wish they made these available off the shelf because I can think of a handful of people just off the top of my head who would enjoy a box of these little babies.
Another standout component of this beautiful plate of sweets is the lemon meringue tart which honestly had the best tart-to-lemon ratio. While it may look dainty and unassuming, I love how delicious the tart was (it definitely had enough butter!) and how levelled the sweetness and saltiness were. The Spring Mini Cup Cakes were also not just a sight to behold as well - the fluffy and moist cupcake is topped off with a delicious icing that is worth every single calorie!
An array of fresh savoury selections were also served throughout the Afternoon Tea (feel free to ask for more if you desire!) - I really enjoyed the seafood quiche and the zucchini puff with the Jamón Ibérico ham. I also could resist ordering a Hot Brew Coffee (another specialty here) towards the end of my meal. Watching how the water is poured over in a rhythmic clockwise motion is an experience in itself - this motion from the centre of the coffee grounds actually helps to bring out the flavour of the beans before the final pour seals it in.
To end off the Weekend Afternoon Tea experience at the Four Seasons Hotel Singapore on a sweet(er) note, a delicious French toast with fresh seasonal berries. It is definitely nice to see how much attention and dedication has been given to coffee-drinkers - understanding that a perfect Afternoon Tea experience is in fact, not just about the tea selection, is definitely something that other properties can learn from. The Weekend Afternoon Tea experience is priced at S$46++ per person and it is only served between 2:00PM to 5:00PM on Weekends.
This was an invited media-tasting session, though all views expressed are my own.
