Sashimi and Sushi Buffet at Hokkaido Sushi (M Hotel Singapore)

One of the lesser known Japanese restaurants in Singapore, Hokkaido Sushi (located on level 9 of M Hotel Singapore), has recently introduced The Hokkaido Buffet Experience that includes most of the restaurant's signature dishes and air flown sashimi at a single price.

All the sashimi are free-flowing with the exception of the Botan Ebi, Hotate and the Truffle Hamachi. Hokkaido Sushi's fish and seafood are directly imported from the markets of Tsukiji and Sapporo, Japan, twice a week (Mondays and Fridays) and the best ones are handpicked by the chef to be served. Honestly, the quality of sashimi alone should be a good enough reason to return to this place - that Salmon Belly is something to watch out for because you are definitely going to have seconds.

Hokkaido Sushi also prides itself in using an organic and high-grade Japanese Nanatsuboshi Rice that is flown in directly from Japan. This rice is believed to be perfect for sushi as it's naturally sweet flavours (amplified by the use of mirin) help complement the sweetness of the fresh ingredient. That Salmon Aburi Sushi is definitely one of the best ones I have ever had in Singapore! 

Ikura Chawanmushi and Pitan Tofu

Fans of ikura (salmon roe) will also rejoice with the Ikura Chawanmushi - the egg custard itself is nothing to be excited over but the use of fresh ikura just makes everything so much better. The signature Pitan Tofu is also a dish you should try as it combines the century egg (also known as pitan) which is widely used in Cantonese cuisine with tofu.

As part of the buffet, you will also get to select from a list of Maki Rolls that are made-to-order. We sampled the Hokkaido Maki Roll which is a rice roll that is topped with ebiko, mayonnaise and a bite of salmon in the middle. 

There is also a decent selection of hot food if you get sick of eating sashimi and sushi but honestly, the sashimi quality stood out from the rest of the food. The cooked food is decent but it is not worth wasting your stomach space for (except perhaps that garlic rice).
